E. Mitchell Seymour, PhD University of Michigan Medical School's Section of Cardiac Surgery Dr. E Mitchell Seymour obtained his BS in Biology from the University of Notre Dame, and his PhD in Biochemical and Molecular Nutrition from Michigan State University. Dr. Seymour is currently a research scientist at the University of Michigan Cardiovascular Center and the Michigan Integrative Medicine Program. His research examines the effects of phytochemical-rich diets on various animal models of cardiovascular disease. As cardiovascular disease involves both inflammation and oxidative stress, Dr. Seymour explores how phytochemical intake may modify inflammation, oxidative stress, and related disease. Using whole foods models including tart cherry, blueberry, grape, and apple, Dr. Seymour explores the impact of fruit-enriched diets on metabolic syndrome, atherosclerosis, hypertension, and heart failure. In addition, he tests the health effects of these fruits in the setting of both a lower fat and a higher fat diet, to reveal the optimal diet pattern for reduced chronic disease. In addition to animal studies, Dr. Seymour is currently involved in clinical trials with tart cherry and grape. |
