Cherry Granola
Rolled oats tossed with bran, wheat germ, sesame seeds, dried cherries; drizzled with canola oil, cherry juice (or concentrate), honey and vanilla
Ingredients:
6 cups old-fashioned rolled oats (not quick cooking)
3/4 cup raw wheat germ
1/2 cup oat or wheat bran
1/4 cup nonfat dry milk powder
2 tablespoons untoasted sesame seeds
3/4 cup honey
1/3 cup canola oil
2 tablespoons cherry juice concentrate
1 tablespoon pure vanilla extract
1 cup dried tart cherries chopped
1/2 cup slivered almonds
Directions:
Position rack in middle of oven. Preheat oven to 250 degrees Fahrenheit. Combine first five ingredients in large mixing bowl.
In a small saucepan, combine honey and oil. Stir over moderate heat until mixture is well combined. Do not boil. Carefully stir in cherry juice concentrate and vanilla extract.
Pour honey mixture over dry ingredients and combine well. Spread out on two sheet pans and place in oven for 1 hour, rotating pans and stirring every 20 minutes to ensure even browning.
Add cherries and almonds during last 10 minutes of baking time. Be sure to allow granola to cool completely before storing in airtight container.
Note: It is important taht the wheat germ is raw and untoasted. If not, it may burn in slow toasting process.
Makes about 10 cups or thirty 1/3-cup servings
