Very Cherry Crunch Cake

Ingredients:
1 1/2 cups + 1 Tbsp oat flour
1/2 cup almond meal
1/2 cup turbinado sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 omega-3-enriched egg
1/4 cup olive oil
1/2 cup fat-free milk
1 cup frozen cherries
1 cup frozen blackberries
1/2 cup rolled oats
3/4 tsp ground cinnamon
1 Tbsp honey

Directions:
Preheat oven to 350°F. Coat 8” baking pan with canola oil cooking spray.

Combine 1 1/2 cups of the flour, sugar, baking powder, and salt in large bowl.

Whisk egg, oil, and milk in small bowl just until combined.

Add egg mixture to flour mixture and mix well.

Toss blackberries and cherries with remaining flour in medium bowl to coat. Gently fold berries into batter and pour into prepared pan.

Combine oats, cinnamon, and honey in small bowl. Sprinkle cake with honey-oat mixture using clean fingers, loosely covering surface of cake.

Bake 40 to 45 minutes on middle rack in oven, until knife inserted in center comes out clean and topping is lightly browned. Let cool completely in pan on rack before serving.
