Tart Cherry Baked Brie Bites

Ingredients

  • 1 cup dried Montmorency tart cherries
  • 1/2 cup red wine
  • 1/4 cup balsamic vinegar
  • 1 1/4 cup water
  • 1 1/2 tbsp cornstarch, mixed with water
  • honey, salt, pepper to taste
  • 2 sheets puff pastry dough, cut into 3-inch squares
  • 18 mini wheels of Brie cheese
  • 1 egg, beaten

Directions

For the sauce:

  • pour boiling water over the cherries and let them plump up for 30 mins, drain water
  • simmer red wine and balsamic until reduced, about 5 mins
  • add tart cherries and cornstarch dissolved in water, simmer another 5 mins
  • season to taste with salt, pepper and honey
  • let cool before serving

For the brie bites:

  • wrap cheese wheels in 3 inch sections of pastry dough, pinching at the top to seal
  • brush with egg
  • bake at 400° for 20 minutes
