Tart Cherry Chocolate Cayenne Crunch

  • 1 cup chickpeas, canned
  • 1 cup shelled pistachios
  • 1 tablespoon coconut oil
  • 1 teaspoon cayenne pepper
  • ¼ cup chocolate chips
  • ½ cup dried Montmorency tart cherries


Preheat the oven to 400 degrees F

Rinse chickpeas in water, removing all skins + pat dry with towel

Place chickpeas, pistachios, coconut oil and cayenne in a bowl and mix well

Line a baking tray with parchment paper, spread mix evenly and bake for 20 minutes (watch closely)

Remove from oven and let cool

Once cool, mix in tart cherries and chocolate chips

Pro tip: make a batch once or twice a week and keep in airtight containers or baggies for when you want to run out the door!
