Grilled Lamb Chops with Tart Cherry Sauce

- 4 lamb chops
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 cup whole Montmorency tart cherries (defrosted)
- 1/2 cup red wine
- 1/4 cup fresh orange juice
- 1 tablespoon maple syrup
- 1/2 teaspoon crushed rosemary
- 1 teaspoon cornstarch
Preheat the grill to medium-high. Lightly coat with oil.
Season both sides of the lamb chops with salt and pepper. Grill until medium rare (120 degrees F), about 3 minutes per side.
In a medium saucepan, stir together the tart cherries, red wine, orange juice, maple syrup and rosemary. Bring to a boil and cook for 2 minutes, stirring frequently.
Reduce heat to medium-low and simmer for about 8 minutes. Whisk in the flour and cook for 2 additional minutes.
