Tart Cherry Syrup

Ingredients

  • 4 cups unsweetened Montmorency tart cherry juice
  • 3/4 cup sugar

Directions

This simple cherry syrup is so ridiculously easy to make, you don’t even have to stir. As it simmers, the Montmorency tart cherry flavor and color concentrate into a thick and brilliantly red syrup. Use it as the basis for your own fruit-on-the-bottom yogurt cups or add a few tablespoons to a glass of seltzer water for make homemade cherry soda. You can even drizzle it over pancakes and oatmeal to bring a bright burst of cherry flavor to the breakfast table.

In a 2-quart stainless steel pot, combine sugar and Montmorency tart cherry juice over medium heat. Bring to a boil and simmer, undisturbed, until reduced to 1 cup, about 45 minutes.

Pour into a glass jar and cool to room temperature; seal and refrigerate until needed (lasts for up to six months).
