Mini Tart Cherry Cheesecakes

Ingredients
- 1 box vanilla wafers
- 2 (8oz) cream cheese at room temp
- 2 eggs
- ¾ cup sugar
- 1 tbsp. lemon juice
- 1 tsp vanilla
- 1 can (21 oz.) tart cherry pie filling
Directions
Put one vanilla wafer at the bottom of foil cups in cupcake tins.
Beat all other ingredients, except tart cherry pie filling, at high speed for 5 minutes.
Put about a heaping tablespoon of cheesecake mixture into each cup, making sure vanilla wafer is covered.
Bake for 15-20 minutes at 350F
Top with tart cherry pie filling when cooled.
