Tart Cherry Oatmeal Cookies

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened at room temperature
  • 1 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups old-fashioned rolled oats
  • ½ cup dried Montmorency tart cherries
  • ½ cup macadamia nuts

Directions

In a large bowl, mix the flour, baking powder, baking soda, and salt.

Set aside. In a separate bowl, add the butter and honey and mix with a hand mixer until smooth.

Add the eggs and vanilla and mix again until combined. Fold the dry ingredients into the wet ingredients until incorporated.

Fold in the oats, tart cherries, and macadamia nuts.

Scoop the dough into 2-tablespoon balls and place in the fridge to chill for 30 minutes.

While the dough is chilling, preheat the oven to 325℉ and line a baking sheet with parchment paper.

Bake for 12 minutes, until brown around the edges. Let cool completely before serving.
